My Review of El Serpis Olives

El Serpis has been a popular brand of Spanish olives since 1926. The company originally pioneered the production of anchovy-stuffed green olives. El Serpis olives, whether stuffed with anchovies or red peppers, are tasty on their own as a snack, in a martini or as part of an antipasto.

I make an Italian-style pannini with Toma Cheese and the wonderful anchovie olives.

You might think so but the processing of olives and anchovies outside the U.S. produces a remarkably different product than the anchovies that you find on the average American grocery store shelves.

One pleasurable food memory . .

Leaving Tuscany to head back to the airport, our friend ,who owns a food market filled with delectable specialties from around Europe, packed me an anchovy sandwich on unsalted Tuscan bread.

She explained that the anchovies were from Spain and touted to be the best in the world.

I was amazed at the flavor and consistancy of the anchovies. No mushy fish but a firm, flavorful anchovy. Now I "dream" in "anchovy"!

I will be happy to share the recipe for the Pannini.

And it is scheduled to be on an upcoming episode of Home At Last.

Also, there is a great sugar and salt cured salmon recipe coming up on the Foods of the Nutcracker.

I will making it into Tea Sandwiches.
