Oyster Mania

I suffer from "oyster mania" Raw-baked-broiled-stewed-gussied-naked-it really doesn't matter. I grew up on raw and thought I was pretty much a purist-but, I've discovered that I really love them just about any way they are lovingly prepared! You're probably thinking "Hey, I really like oysters, too? So, what's the big deal? No big deal, I suppose . . .I'm just setting the record straight I get a lot of questions about my favorite types of foods and recipes and I never remember to include oysters! But this week has been an excellent reminder of how much I really enjoy these wonderful little bi-valves! I started the weekend with a dozen oysters raw with cocktail sauce, fresh lemon and extra horseradish and a BBQ sandwich. Saturday, I enjoyed steamed oysters with a little Monterrey Jack cheese (surprisingly good) along with a steamy bowl of clam chowder. Jacque Pepin's Chicken Liver Pate

Every silky-smooth bite of this pleasing chicken liver pate was worth the extra calories!  Created by my daughter-in-law's mother, Jill, the recipe captured everything I love about pate! A perfectly smooth pate enhanced by the addition of cognac. The rich chicken livers pared deliciously with a dark berry compote made of strawberries, blackberries and fresh blueberries! Recipe: Jacque Pepin's Chicken Liver Pâté FAST MAKE-AHEAD 1/2 pound chicken livers, well-trimmed 1/2 small onion, thinly sliced 1 small garlic clove, smashed and peeled 1 bay leaf 1/4 teaspoon thyme leaves Kosher salt 1/2 cup water 1 1/2 sticks unsalted butter, at room temperature 2 teaspoons Cognac or Scotch whisky Freshly ground pepper Toasted baguette slices, for serving In a medium saucepan, combine the chicken livers, onion, garlic, bay leaf, thyme and 1/2 teaspoon of salt. Sisterhood

Happy New Year! Whew! I don't know about the rest of you, but I am unusually thankful to see 2009 arrive! It has been such a hard year for many of us. I'm sure we all want to move on to a more positive time in our lives. 2008 brought many blessings into my life but they were all somewhat bittersweet with the absence of my friend and sister, Char' Fontane. Like so many other precious women, Char' succumbed to breast cancer in 2007. I made it through my second Christmas without Char'. It wasn't as bad as the first year after her passing-but I can only hope that the years will get easier as time passes. Sadly, there were no new Christmas antlers added to my extensive collection, there was no excited "girl" chatter about the perfect gift for someone on our Christmas lists, there were no mystery boxes on my doorstep, each filled with gifts carefully chosen for me and there was no candled-filled evenings in celebration of family and friendship!
